TUSU liquor undergoes a complex production process consisting of 6 main steps: high-temperature preparation of starter, piled-fermentation, distillation, long-term storage, meticulous blending, and bottling. The transformation of raw materials into the final product takes at least two years, involving 13 main processes and 85 procedures. During fermentation, the temperature reaches as high as 60°C, cultivating a unique microbial community dominated by bacteria that can withstand high temperatures and produce a pleasant aroma. After distillation, the base Baijiu is classified and stored, aging for at least two years in ceramic jars.
