The 1,000-Day Wait: Aging in Clay Jars
Time is the most expensive ingredient in our premium collection. After distillation, the spirit is not bottled immediately. Instead, it is aged in giant terracotta jars. These clay vessels are "breathable," allowing a microscopic exchange of oxygen that mellows the alcohol and integrates the flavors. For a spirit like Kweichow Moutai, this process takes a minimum of five years. Over time, the "harsh" notes evaporate, leaving behind a liquid that is silky, dense, and possesses a finish that can linger on the palate for several minutes.
